Ascorbic Acid is a white to slightly yellow powder with a strong acid taste. It melts at about 190 °C with decomposition. Ascorbic Acid is freely soluble in water and sparingly soluble in alcohol. It is fairly stable to air if protected from humidity, but is somewhat sensitive to heat. Ascorbic Acid is used in the food industry for the enrichment, standardization or stabilization of dry food preparations and drinks to improve their nutritional value. It acts as an antioxidant in foods, helping to preserve quality and extend shelf life. Ascorbic Acid prevents oxidation of foods containing fats, oils, and food colors. It also improves the baking qualities of flour and is used as an agent in dry mixes for curing meat used in food products.
